Creamy Tortellini and Sausage Soup

I pull out my crockpot when I know we have a busy night ahead. The peace of mind that comes with knowing supper is done ahead of time can’t be beat.

This is a recipe that will require very little of you, but is packed with lots of flavor!

Even my pickiest child, who had complained all day knowing this soup was cooking, took one bite and said “this is actually really good.” I’ll take it. :)

A couple of things to note about this recipe:

  1. I used frozen tortellini. Fresh/refrigerated will cook too fast and become too soft. If you want to use fresh, just add it at the end.

  2. I used Italian sausage, but you can definitely use medium or hot, depending on your preferences.

Another perk? You likely already have several of these ingredients on hand.

Creamy Tortellini and Sausage Soup

1 pound Sausage (add another pound if you like a lot of meat in your soups)

2 cans chicken broth

2 cans Italian style diced tomatoes

1 bag frozen spinach

1 bag frozen tortellini

1 block of cream cheese

I also threw in a scoop of minced garlic. Totally optional, but gives more flavor.

Brown and drain your sausage. Set aside. Cut up cream cheese in small chunks so it melts evenly and quickly. Add all ingredients to your crockpot and cook on low for 5 hours. I do stir a few times throughout the day to make sure the cream cheese is melting and being incorporated in the soup, but it’s not necessary if you’ll be away from home.

I served a side salad and bread with our soup because I just love that combo, but this soup is hearty enough on its own you don’t have to serve anything with it.

I can’t wait to hear how you like it!
